Yeast

Yeast is a living, single-celled fungus that bakers use to raise bread. As it feeds on sugars in the dough it releases carbon dioxide gas, which the gluten network traps to make the loaf rise. It comes as fresh, active dry, or wild yeast, and each behaves a little differently in the kitchen.

What it is

Yeast is a microscopic organism, not a chemical powder. Given moisture, warmth, and something to eat, it wakes up and begins fermenting the natural sugars in flour. Fresh yeast is soft and crumbly; dry yeast is dehydrated into granules that keep far longer; wild yeast is the untamed kind that lives in a sourdough starter.

Why it matters

Rise is only half the story. As yeast ferments it also builds flavour, softens the crumb, and improves how long bread keeps. A slow, cool ferment develops a deeper, faintly tangy taste, which is why unhurried doughs so often taste better than quick ones.

Common mistakes

Water that is too hot kills yeast outright, while a cold, draughty kitchen leaves it sluggish. Bangalore's warmth is usually kind to yeast, but on very hot days dough can over-ferment and turn slack and boozy-smelling. Trust your senses: lively dough smells faintly sweet and springs back slowly when pressed.
